1/3 cup chopped onion
1/3 cup chopped green pepper
1 cup chopped mushrooms
Optional : 1 cup chopped spinach or broccoli
4 cups cooked spaghetti
2 cups cooked chopped chicken
2 large eggs, beaten
2 cups Alfredo sauce
¾ cup grated Parmesan cheese
½ grated cheddar cheese
1 T Mrs. Dash seasoning

4 cups cooked spaghetti
2 cups cooked chopped chicken
2 large eggs, beaten
2 cups Alfredo sauce
¾ cup grated Parmesan cheese
½ grated cheddar cheese
1 T Mrs. Dash seasoning
Directions
- Cook spaghetti, drain, rinse, and set aside.
- Cut up chicken and set aside.
- Cook and chop broccoli, if desired, and set aside
- Chop spinach, if desired, and set aside
- Sauté onions, green pepper, and mushrooms in a skillet with a tablespoon of vegetable oil for 5 minutes and set aside
- In a large bowl mix together chicken, broccoli, spinach, onions, green pepper, mushrooms and Parmesan cheese with beaten eggs and Alfredo sauce
- Grease a large casserole dish or glass baking pan and fill with the cooked spaghetti.
- Pour the mixed meat, vegetables, and sauce over the spaghetti, adding a little water if it seems dry.
- Top with grated cheddar cheese.
- Bake at 350 F for 30-40 minutes until egg mixture is well cooked and cheese is melted and browned on top. Let cool for 5 minutes then cut into squares and serve.
